The downside that reviewers noted was that it doesn't arrive very sharp, but I figured that I know how to sharpen a knife so it would probably be fine. And it was: the knife needed hardly any sharpening to bring it to a nice edge and it is great to use. This is the best value for money knife I own. I paid about 18 quid for a high quality (if rather specialised) knife. I've used it for deboning a joint and for preparing melon and the flexible blade is perfect. I have one other sebatier knife which I "acquired" when I moved in with my partner. I initially looked down on it as a cheaper brand but I have had to eat humble pie as it actually holds its edge way better than my Globals, wusthoffs, or Shuns. Hoping this one is as well!

Great product and great quality service

Very very flexible, as it happens. Which is good, because that is exactly what a filleting knife should be. I just wish the description made this point clear.

The blade is very flexible and razor sharp out of the box,,, I flitted some fish with it and found it exelent with very clean cuts and the handle felt good I haven't tried sharpening it yet and with it being very flexible I think it will be better to use a sharpening steel.

This is without doubt a quality product! Extremely well made and the blade is really flexible and superb for filleting and very, very sharp. The downside?, it is a shame that the manufacturer did not make a proper sheath or guard to protect it when the knife is being stored! The cost of the knife, for it's quality, is not expensive and I would have paid the extra money to have a proper sheath or guard fitted to the knife.

An excellent high quality product for the price.

I saw James Martin on his Saturday show describing the perfect knife for filleting fish. The blade has to be flexible and should be quite narrow. I asked Amazon Questions if the blade is flexible and the first response said that it is, so I ordered one. I then received several responses to say that it isn’t... I’m glad to say that it actually is quite flexible and looks to me like exactly what James Martin recommended. The knife looks beautifully made too. Highly recommended.

Razor sharp, excellent quality, very happy.

I bought this knife specifically for cutting jamon. Did not like: 1. Knife size. The description indicates the length of the knife is 37.5 cm, I was delivered a knife with a length of 28 cm. 2. I could sharpen a knife like this myself with an ordinary stone. A sheet of paper cuts badly, burrs on the blade are visible. For a universal knife it will do, but for a new fillet knife it is very mediocre. 3. The same applies to sharpening. The tip of the knife is not sharp, but rounded. Somewhere 1 cm from the tip is not sharpened at all, but although the description says "taped ground blade for effortless precision cutting" Only suitable for inaccurate crush. Liked: 1. Build quality. The handle is made strong. There is a limit from the blade. 2. The knife is fully cast, looks durable

Das Messer macht das was ein gutes Messer machen soll. Es liegt gut in der Hand und die Schärfe ist auch OK. Dem Material nach sollte es sich später auch schärfen lassen.

Im Prinzip sehr gut, leider hat es keine Hülle für Unterwegs, falls man es zum Angeln mitnehmen möchte.
