What kind of container is best for storing in the refrigerator? I won't use a pound right away; so, what is the expiration date once it arrives?

Wrap it b tightly in plastic wrap then on a air tight container If you've a wide mouth glass jar that's ideal better than any other container but do wrap it If you have a food saver divide it up into chunks you know you'll use right away within 2.weeks A old Italian lady I knew always had big hunks of Italian hard cheeses she'd wrap in cheesecloth shed soak in vinager and squeeze out after Or white dry wine? Then wrap it up in plastic or waxed paper after then in a container..something like it must of worked because she always had it and used it and it never went bad I go for wrapping tightly wide mouth glass n best a food saver if I get over half pound especially. If mold develops scrap city it off your cheese is still great and safe

Is top quality

Almost has a strong but cheese hint. I love it!!! Top quality. Came well packaged even in summertime. I will restock. Lasts a while. Don't need a lot to be satisfied. Has a little salt grit and also some fat around it you would wipe away, but I'm supposin' that's a good quality sign! Thank you for having this unique product available!!!

Fresh and delicious Parmesan

Absolutely the most delicious fresh parmesan. It was well packaged in a vacuum sealed package inside an insulated pack with an ice pack that was still cold when it arrived. I made fettuccine Alfredo from scratch and it was soooooo creamy and full of flavor. Will order from this deli again. I highly recommend.

Mold on the cheese, not as photographed

This product arrived with mold all over it, not even wrapped in a shipping envelope or box Pictures below describe how it arrived Second cheese ordered to replace the first second arrived in the same condition mold all over the cheese see photos, I have been refunded but i would like a replacement for this inconvenience and receiving two orders of mold invested cheese

Parmigiano Reggiano is better than other brands

Contacted supplier regarding came in a bag that had wet solution inside all around, which I was not familiar with; received a near instant reply in less than an hour: That's the cheese oil, refrigerate before open and wipe down with paper towel after open. Talk about way fresh cut off the block. Parmigiano Reggiano is better than other brands, deeper sharper taste, very nice. Will order again.

Parmigiana Reggiano

I recived the product in a timly manner, however it was not properly "Cryovacted" Air got in & it was exposed to temp. When i recived it, it was slighty melted & oily. I used it anyway. The taste was great, but when microplaned, it was like grating butter. Alittle reluctant to order again...$ Thanks, Kim Kahana Jr ACF Cert. Chef
