Nice pan
I spend more then $3000 in cookware in past two years, and just bought a carbon steel wok from different brand it is too heavy. Still have few Sori yanagi cast iron pan and Iwachu brand cast iron pan, but sometimes I really need some light weight and non stick pan too, looking for a while I decided to get Sori yanagi carbon steel pan the only thing I was worried about size, I don't want too small also not too large pan, so yesterday when I received package and opened the box this is exactly what I want and wash it cooked some food right way, I love it .

light but hard to make it not sticky
I tried to find the official website to get methods for making the pan non-stick, and then the pan actually caught fire on its own. After extinguishing the fire, I cleaned it five times, but when I heated oil in the same pan again, the oil remained black. It's really difficult to clean. I spent 4 hours working on this pan, but it's still a sticky pan, and it turned the oil black.

Do not recommend! Nonstick layer coming off!!!
Love this pan so far. Even though I am not 100% sure of the top coat in the pan, but the pan suvived stir fry and burns! Updates: purchased the item in Oct 2024, now it is May 2025, noticing the layer coming off!!! Shame on this product made in Japan claiming no nonstick layer and all steel!!!

What’s this undisclosed coating material that I ate???
Wok is lightweight, provides even heating, performs well UNTIL the black coating started scrapping off. Not sure if it was due to use of metal utensils or something else. HOWEVER, I purchased the skillet for its claim of a pure iron skillet just so that I don’t have to worry about coating when cooking with high temp (frying, grilling, etc.). I didn’t expect large amount of coating-like scraps coming off the surface. What have I and my family been eating! Super disappointed! Many others in the review section are saying the same after a couple month of usage. I verified on the information page again and there’s no mention of any coating material. What is this?! 1 star, 0 if I could, until the manufacturer updates the skillet material list or explains how an iron skillet (carbon or cast) can have blacks scraps/chips coming off the surface.
