These roasted pistachios taste burnt. They are dark in color with some black. Don't buy them. I bought another brand and there is a big difference. They are not as dark with a good roast flavor. I took comparison pics. Well, you will know which is which just by looking at it.

These are my husband's absolute favorite snacking nuts. He loves pistachio nuts, and we've been trying different brands to find the tastiest unsalted pistachios. These are the best we've tried. The flavor is brought out with roasting and we don't miss salt at all. My husband says they taste just like pistachios are supposed to taste. I think they taste nutty and a bit creamy and have the sort of 'green' flavor I associate with pistachios. (I like them too.) We've moved to getting the 3 pound bag in Subscribe and Save, monthly. When they come, I divide them into about 10 smaller ziplock bags. (Because someone I will not name has previously sat down in front of the TV with the whole 3 pound bag and nibbled away for hours, eating close to a third of a bag in one sitting.) (Personally I feel eating that many nuts at once ought to have gastro intestinal consequences, but they didn't.) He gets 8 bags. They must last the month. No pity, no mercy, no buy another bag to tide him over, no stealing any left in my 2 ziplock bags. You have no idea how eagerly Subscribe and Save delivery day is awaited in our house. :) I do wish they were less expensive, but they are very good. You also get the most nuts per pound with unshelled. I found cheaper ones, and the flavor and freshness did not compare well to these. We also tried raw unsalted pistachios, and the flavor was insipid. Roasting seems essential to giving good flavor without missing salt. (I think sometimes mediocre flavor is disguised by salt.) You can also make a heavenly baklava using pistachios. I have no idea how long it would take for these to get stale, because these don't stay around long enough to find out. If you have a pistachio nut in your house, try these. They do come in smaller quantities than 3 pounds. We tried smaller bags of about 5 different brands to figure out what we liked the best.
