Hi, you need a controller and a power supply. You can use Arduino, Raspberry Pi, FastLED library, Rainbowduino, SP107E, K1000C,T1000S, etc.

Q: Can these be used under a heavy countertop such as Quartzite or Agate?

Yes, with a couple precautions. You would not want the LED panel to bear a lot of weight and you would want to make sure you have access to the panel in case it needs to be replaced.

Q: Does it come with a power adapter or do i need to get one? If so do you recommend any?

It does NOT come with any additional parts, such as a power adapter. It's just a single piece, with in and out wires soldered to the back. Besides, you need to drive it with a microcontroller, like the Arduino. There are 3 wires in (positive, negative, and data) and 3 wires out (positive, negative, and data). You don't need to use the output wires unless you're chaining to another device. The data line is really a serial communications line, so it's not just on or off. You must modulate the signal on the data wire. The Arduino has a free library for this, where you can specify an individual LED (0-255) and the R-G-B values for it (0-255 for each color). Then the Arduino takes care of sending the correct signals to the data-wire.
