This pasta is fantastic, and the company delivers it perfectly. Our family eats only GF, and edamame is our favorite. It’s so much more nutritious than white-flour noodles, adds an interesting texture, and soaks up the sauce flavors well.

Excellent product - was purchasing it at our local Jewel grocery store but it's hit-&-miss, so ordered multiple boxes from Amazon. With a gluten sensitivity, I've been trying different gluten-free pastas, and so far I find the Explore Cuisine brands of pasta the best. I check the carb # on the boxes and so far the Edamame is the lowest. Weigh out 2 ounces per person, and it is more than enough for a serving size, while still getting a high protein meal. If you want a more al dente' texture, either cook at the lowest time of 3 minutes or, me, I boil it for only a little over 2 minutes, drain the water, then add filtered water, and drain again. Favorite recipes are: 1) can of Bar Harbour whole clams with Lacinato Kale ribbons in a good basil/tomato pasta sauce; and 2) baby scallops sautéed in garlic scape pesto.

I’m trying to keep carbs in my diet low. Of course that has meant giving up pasta which is my favorite. I’ve tried other low carb pastas & have found them to be just gross. I decided to try this edamame pasta & have found it to be the best so far. No low carb option is going to be anywhere as good as regular pasta but I found the texture to be better with this edamame option & it takes on the flavor of the pasta sauce.

I had to give it up because I wasn't aware people with hypothyroidism isn't supposed to eat soy. Not to worry, my sister loves it too, so I gave the rest to her, and it didn't go to waste. If you're allowed to eat soy products but need a gluten alternative, this is it! The texture is perfect, the taste is smooth and can be eaten with just a bit of butter and parm. Or you can use your favorite sauce or pesto. This is the go-to pasta for people that can't have gluten but can have soy.
