Anthony's Organic Guar Gum Powder, 12 oz, Gluten Free, Non GMO, Keto Friendly

I used this to thicken my ice cream made with a Ninja Creami and it worked perfectly. Just the right consistency and smoothness.

I bought this because I saw studies that guar gum can lower blood glucose spikes and A1C values. I had just started using a Stelo continuous blood glucose monitor (CGM) that you can buy from Dexcom without a prescription. It has been eye opening and life changing to see how high my glucose goes after every meal, way beyond the healthy range of 70 - 140. Seeing how high my blood glucose is spiking for two - three hours after dinner even with exercising for a hour is scary knowing how it is causing damage to my body. Taking a barely a teaspoon of the guar gum mixed in cold water creates a slightly thicker viscous solution that I drink before I eat. In general, the guar gum has brought my glucose spikes by approximately 30 points and shortens the number of hours for the spike (instead of 2.5 - 3 hours of glucose above 140, it can be 1 hour, 15 minutes). It slows digestion to prevent the spikes. It mostly dissolves but sometimes a little can get stuck to the spoon or the glass and there are tiny lumps. I have been using this for 3 days now, and I am not as freaked out by my blood sugar readings using the guar gum. For possible negatives, I have read it can cause bowel obstruction, diarrhea, or constipation, so I am drinking many glasses of water with my meal since I don't want the stuff to gunk up my intestines. Please note, I am not a medical professional and cannot give medical advice. I am just sharing why I bought it, how I am using it, and my experiences with it. I will update my review if I notice any problems or long term side effects. Right now, I have found in the guar gum something that helps prevent such high glucose spikes and will thicken my gravy and sauces. Since I am not diabetic and barely pre-diabetic, I don't think I am a candidate for insulin, nor do I want to have to go down that route if I can avoid it with reducing carbohydrates and exercise. With the high readings from the Stelo CGM, I told my doctor and he prescribed the Dexcom G7 CGM which my insurance will cover even though I am not diabetic.

I use a Ninja Creami and this makes my ice cream turn out great. It doesn't take much for each container of ice cream, I use about 1/4 tsp and there is no flavor (which is exactly what I want). A great tool for your homemade ice cream.

I'm on Keto and thought I'd try guar gum to improve consistency of my homemade keto ice cream. I put a quarter of the recipe directions. It worked but the ice cream had a slimy consistency. I doubt I will use guar gum in the future for anything

I use about 5-6 other fibers in my morning mash (fiber + mushroom powders) in my coffee and find it assist with my fasting (18 hours) and mental focus/clarity throughout the morning. Plus I know it's critical to drink plenty of water when you supplement with fiber. I use Anthony's for other items like ginger and turmeric powder for my salad dressings. I've always found their quality high and pricing fair. Organic helps reduce pesticide and other chemical (glyphosate) impact. Highly recommended. Please let me know if this review was helpful. This is a great addition to thicken popsicles we make. It gives them a less icy taste and texture. Easy to use and can be used in various recipes.

I'm giving this five stars because I have to assume it does what it's supposed to do. But in all honesty I have no idea how to review it. This went in a recipe for ice cream with a Ninja Creami. Supposedly it's supposed to help the texture of the dessert. Although the Ice Cream came out terrible the texture was quite nice though. Hence the five stars!
