Can this be used for scrambled eggs/omelets?

No, It doesn't fry or anything. It can be used as a egg replacement in the creation of meringue and it can replace eggs in any recipe calling for eggs as a binding agent. For scrambled egg you might want to look into buying vegg the Scrambled vegan egg mix. It works great for them. I also suggest you experiment with using chickpea flour, turmeric, and black Salt or Kala Namak.  Those are what I use when doing a vegan Omelet.

Has anyone used this product for a quiche or frittata? How was it?

This product would not work for that type of a recipe. My suggestion for a Quiche or a Frittata would be to use a mixture of Chickpea Flour. Black Salt (Kala Namak) water, a little nutritional yeast, olive oil, turmeric for color, and Agar powder. The mixture blended on high speed in your blender will create a wonderful egg base for a Quiche or Frittata. I use that same mixture for a kick butt omelet also. The Orgran No Egg is perfect for making a whipped meringue or for use in cakes, pies, or any thing that needs a leavening agent or a good binding agent. The Orgran no egg doesn't supply the solid egg form which would result from frying an egg in a skillet though. I hope that helps. Orgran has created an egg product that would work for that though. To replace 1 Whole Egg: Add 1 tsp egg replacer + 2 tbsp water.

To replace 1 Egg White: Add 1 tsp egg replacer + 1 tbsp water.

To Replace 1 Egg Yolk: Add 1 tsp egg replacer + 1/2 tbsp water.
