What's the difference between this er20xs model and etymotic's cheaper "high fidelity" option?

The noise attenuation is the same. Both are "high fidelity" earplugs in that they lower the decibels to a safe level while preserving clarity.Differences--ER20XS can change out the eartips. ER20XS has an option for foam eartips. ER20XS stem is shorter and more discreet. It fits more comfortably underneath hats, helmets and other headgear. Etymotic Research

I see most reviews used these for concerts/music... How do/would you think they would perform with something such as shooting firearms?

I would not recommend them for shooting a firearm. These earplugs are great at filtering the sound and reducing overall noise by about 20-30 decibels. This is not nearly enough for the bang of a firearm.

Will these stay inserted in the ear if the person is performing/fast moving or will the combination of sweat and movement cause them to fall out?

Let's start with comfort. They are not as comfortable as poly plugs- but, you will get used to them. Watch GP riders before a race. All use urethane plugs.But, I do like them and continue to use them- usually. They stay in a bit better and reduce the noise at lease as well. You own a BMW, you can afford to try them. You might prefer them. Buy a pair.

What's the difference between universal fit and standard/large?

universal fit gives you 3 different replaceable fittings and is the safest choice if you want a more exact fit. Standard is what fits most people. Large that simply for those that have large ear openings.
