The only things I do differently are use two small to medium zucchini instead of the eggplant and 1 cup zucchini. Then I put in 2 1/4 teaspoon vegetable base (or more as needed) and water in place of the salt-free vegetable broth. I also omit the cilantro. And I use half a can instead of just a 1/2 cup of pumpkin. Either way this has become a staple of my cooking so I'm happy to get pumpkin puree at such a reasonable cost! Today I had all the ingredients to make the pumpkin chili and it made three servings with medium zucchini. Now I have extra for lunch tomorrow!
