How easy on the eyes is the lg 34wn80c-b? how long before eye strain (or is there really none)?

It's really nice. The picture is really good with very little light falloff in the corners. No perceptible flicker even on the lowest backlight setting. I'm a software developer and stare at screens for 8hours a day. I've returned a monitor due to eye strain and it's something I was worried about too. I'm VERY happy with this monitor.

If I hook this to a mac book pro (expects 85w power supply, not 60w) without attaching another power supply, am I at risk of damaging monitor or mac?

No, your monitor and Mac will be fine. What's important is the voltage. Consider Wattage = Voltage * Current. What 60W means is at the fixed voltage 20V, the monitor can provide a max of 3A of current, and what 85W means is at the fixed voltage of 20V, the power supply can provided a max of a 4.25A of current. So unless your Mac is draining the battering faster than 60W, the monitor will be charging your Mac. Even if your Mac is draining the battery faster than 60W, your Mac will not be charged, but it won't do anything harmful. The key is the voltage, if the voltage is anything other than 20V, or maybe 19V, it will be harmful. Nowadays USB C has standardized the voltages, so you could have peace in mind using any USB C charger.

Will this monitor perform well using a evga geforce gtx 1060 gpu?

Yes. The other responder seems to think this monitor goes above 60hz which it does not. a GTX 1060 will do just fine with this monitor for most games. Just make sure to cap frame rates at 60FPS in game settings. Also keep in mind most games with a competitive mode (i.e. FPS and RTS) will often limit the screen to 16:9 aspect ratio so you will have black bars on the sides.
