When filling up the pool and having to pull the legs out as you go, about how far will the legs have to be pulled out?

As far.as the straps will allow. The sides will bow in a lot as you fill, but will straighten out once it is almost full. Just keep the legs pulled out periodically as far as the straps allow. After a certain point the weight will be to great to let you pull them out. The first few hours are the most important.

Do I need to kill the grass and remove it before putting this down?

You not only need to kill the grass but remove it and put down sand as a base. You want zero chance of anything poking a hole in your liner.
