Do I still need an analog/digital converter for analog gear or can I just hook my analog gear up to a snake?

No external converters needed! x8P has line, mic, and HiZ inputs as well as digital I/O for expansion.

does the x8 includes the thunderbolt cable?

It does not. They come in 1ft, 3ft, 6ft, and 9ft lengths.

How many xlr or line connections can i use at once to record / track? example would be if i wanted to record a full acoustic drum set?

x8P has 8 XLR inputs tied to its 8 mic pres.
