Can this kit make hard cheese? If not, what else would need to be purchased to do so?

You can make feta, Monterey Jack and Cheddar Cheese curds as well as many others with this kit.  However, to successfully make hard cheeses you need more than ingredients.  You need a good cheese press and an aging area where temperatures and humidity can be maintained for long periods of time.  Most of us use a wine refrigerator dedicated for cheese.  In addition, we never recommend anyone jumping into hard cheeses as they are considered intermediate to advanced.  Learning the basics and working out the kinks on a cheese that takes 1 gallon of milk and a day to make is much better than one that takes 3-5 gallons and 6 months to make.  Best,  Paula

What's the difference between this kit And the basic one?

Hi, the ultimate has several additions such as Mesophilic culture (MM100) and Lipase powder to make cheeses such as feta, cheddar, cream cheese, Monterey Jack and many others.  It also allows you to make a more flavorful, traditional Italian mozzarella and a more traditional method of making Chèvre (goat cheese).  It contains the additional recipes, a booklet of "What to do with your Cheese" recipes and a instant read dial Thermometer.  It is most similar to our Supreme kit, my personal favorite without the educational DVD.  Let me know if you have any more questions as I'm always happy to help.  Paula

Are the lipase and the mesophilic culture kosher?

Hi, Lipase is not and unfortunately it can not be sourced as such at this time from anywhere.  The meso is if you purchase it in a slighly larger package.  Both the 50DCU and 100DCU that we sell on here are packaged in a kosher environment.  We do have kosher certificates for all of our products however, a few items are repackaged in a non kosher certified environment even though the environment would meet standards.
