These bags are reusable until they fall apart and if they do, you can use them still as a wrap and put a piece of tap to close it up. If you couldn't reuse them it would be incredibly cost prohibitive. I don't care if the bags look "a little worn" as another person commented. They are in the drawer in my refrigerator - I couldn't care less how worn they look.

How long will parmigiano reggiano last?

I have discovered that hard cheeses like parmigiano reggiano last a long time. I've had a wedge of it in the storage bag now for several weeks and it's fine. I take it out to grate it so that I always have freshly grated cheese for pasta dishes.

They don't give dimensions or volume for bags. How big of a piece of cheese do they hold?

They are 11x6.5x1. It will hold a flat cut of cheese but would not recommend a wedge cut from a wheel. However I do not recommend these bags if youdont eat your cheese quickly. Wax paper is cheaper and does just as good a job or good ole plastic wrap like the grocery stores use in deli dept

Can these bags be used to store grated and shredded cheese or good only for storing cheese blocks?

I think if you seal it well, you should be able to store grated cheese. I haven't tried it though. You could also use the sheets and fold the grated cheeseinside like a butcher would for meat, but I think I'd still try the bags first, and then fold it over a couple of times. I've never had a piece of cheese dry up in these bags, nor have I when storing in the sheets, and that's whether the cheese has been in small chunks and/or slices (as when one has left over cut cheese from a party).

I use these bags for our staple cheddar. If you carefully fold the bags, they can easily last for 4 - 6 weeks. The cheese doesn't sweat and stays fresh. There's just the 2 of us but we are cheese lovers so the bag is open daily. One set will easily last a year. Worth it!
