You could try it. There is no interlock that would prevent the roaster from operating without the lid.

I only use my roaster to roast almonds. There's no smoke emitted just a pleasant odor of roasted almonds. I would presume that that would apply to a coffee also.

How do I replace the lid if it broke?

Just find one that fits. I got two lids from my regular cooking pans that fit.
