A: Amount used depends on the size of the batch being made.  I have  different recipes that call for different  measures, from a few drops to 1/4 teaspoon.  It is an enzyme that breaks down sugars over time.  It is fairley expensive.  Use sparingly and give it plenty of time to work it's magic.
