I thought amylase worked at higher temperatures, like 145F to 155F. It works in this case at lower temperature to convert break down complex sugar?

Alpha Amylase works at 155f. This has Glucoamylase (Beta Amylase), which works at fermenting temp.

Does this yeast produce any esters or phenols ? Seems like rum might benefit from the flavors produced by a wit or abbey yeast.

I am not sure what the yeast produces. I think it produces a mild flavor so that the rum does not get overpowered. Having said that, the yeast reacts rapidly with the sugars and produces a high proof wash. It produces excellent yield and the finest high quality rum I have ever tasted.

would this make a ten gallon batch

The package says 6.6 gal. If you are doing 10 gallon it will just take longer to convert the sugar.

What is the Optimum temperature?

Between 25 to 30 degrees celsius or 77 to 86 degrees Fahrenheit
