Review: A Light Weight, Easy to Use and Store, Quality Knife Sharpener that Works Great, Renewing Ultra Sharp Blades! Enjoy! - This 3.8 ounce Priority Chef Knife Sharpener is an attractive black and silver device with a comfortable grip that is about 5 inches of the 7.5 inch long by 2.25 inches high by just fewer than 2 inches wide product. It comes packaged in a sturdy box that provides clear easy to understand instructions, guidelines, safety advice and tips for best results. A card inside the package provides a website for a free eBook that provides safety tips and 30 recipes for dishes that can be prepared and cooked in less than 30 minutes. This product lives up to its advertising with a great easy to use design with two sharpening positions that work. One is for rough sharpening very dull blades and the other is to even out rough spots and honing a very sharp edge. Simply place the sharpener on a flat surface gripping the comfortable handle and holding the product firmly in place. In my case, I sharpened an old butcher knife lightly pulling the knife handle toward me, passing the blade through the rough sharpener about 10 times. I did the same with the fine tuning sharpener. I rinsed and dried the knife and used it to slice a tomato. Before sharpening the device, I had to stick the point of the blade into the tomato to start slicing. After sharpening the same knife, I finely and delicately sliced the tomato in one light, smooth effortless stroke. Wow! What a difference! After sharpening nearly every knife in the house, I am very happy with the results and recommend this professional tool to friends and family and will likely buy several of these inexpensive devices for Christmas gifts. My final "point" is that "keen" minded cooks will be happy with this "sharp" and quality professional yet affordable and convenient device. Of all of the knife sharpeners that I have used in the past, this is the only one that made the "cut" across the board! Enjoy! UpDate: I enjoy this product so much that I bought one for my son and shipped it to him out of state as a Christmas stocking stuffer! Review: Great Sharpener for European Style Blades - Well I work as a professional cook and I am presently a culinary student also. I needed something to keep the knives nice and sharp, but I really didn't want to invest in a standard stone. This sharpener works great, and easily keeps a good edge on my blades. The construction seems sturdy enough, and the device is easy to use. Make sure to keep a good, steady pressure on your blade as you sharpen it. Also do not run the blade quickly through the sharpener, as you could risk damage to your blade. Slow, even, steady. For anyone interested in getting this item keep in mind that this is for sharpening European style blades, not Asian. There is a difference in sharpening angles. Always check with the manufacturer to find out what angle your blade was sharpened to, use this sharpener for blades done in the 20 - 22 degree angle. Asian blades and some of the newer European style blades are done at a 15 - 18 degree angle. EDIT 7-4-2016: So I bought a second one to have handy at work. I am presently feeling a bit spammed by Priority Chef because they keep asking me for REVIEWS! I already gave one, and I even wrote to them to let them know that I wrote one. I am tempted to give this product a 1 star because of the constant spam. LEAVE ME ALONE.

Does the job well
I was looking to purchase one of the electric Chef Mate sharpeners, which I'd had before and really liked. I happened on this one and, because it got high reviews and was somewhat less expensive, I bought it. To my surprise, it was non electric. It is very light and easy to use, which is a plus. Well, I tried it out on a set of good but very dull knives and it seems to have done the job. (I must say, however, I have not yet tried the knives on fresh meat, which in my opinion is THE test of a knife's sharpness.) I still think the Chef Mate got the knives a bit more razor sharp but for the price and ease of use and storage, this seems a fine sharpener. I would give it 4 1/2 stars.

Not for first time Knife Sharpeners, Lousy Instructions
The sharpener did great, but not without hand-wringing on my part. I LOVE my two good knives. An old 8" Katana series Chef Knife and matching utility knife. Maybe nothing special to knife gurus, but I treasure these knives and don't want anything messing them up. I can no longer find anyone to professionally sharpen them, so it was time to break down and buy my own. In the end this sharpener did a fine job, only using the "fine" side as that was all that was needed - and I only drew through twice. BUT, the documentation is dreadful! There are two microscopic (ok, a slight exaggeration) pictures that don't clarify anything - just showing a knife in one slot vs the other slot - Big deal! But the the directions seem to make an issue out the fact that you should not go back and forth BUT ONLY in ONE DIRECTION. But which direction? On that score, the "instructions" contradict themselves. In one section on the box it says, "Move the knife blade from its end to near the handle". But next to that, on a different part of the box, it says "Pull the knife towards you". I think I can only do BOTH of those things if the knife and the sharpener are behind me, But if I think about that too long, my head starts to hurt!!! A friend told me MOST sharpeners use a "toward you direction" so that is what I used and it did a very good job. But should you have to use the "Phone a Friend" lifeline when you take the time to study directions like I do? They make a really nice sharpener, but skimp on the instructions to the detriment of the product. The only paper found INSIDE the box (where decent directions ought to be) was a piece of paper encouraging me to write a review. Well, I did!
