This is so good and I can't find it anywhere else.
I used to be able to buy this at Whole Foods. After they discontinued it, I found it at another store which is now closed. There is no longer any true Sherry vinegar anyplace that I shop. I have ordered it online repeatedly, but it has not always been available, so I have tried a few other brands. This one is still my favorite. It has a nuttiness and umami that other vinegars lack. I use it every day for salads.

It's really strong
So, I've never had any sherry vinegar as far as I know. I saw this in a recipe and thought it sounded interesting. I cook with sherry a lot. BUT - this did not really taste the way I imagined it would. Sherry is at least slightly sweet. This on the other hand is a powerfully strong vinegar product, not reminiscent of balsamic vinegar at all. However, it has a great flavor and will no doubt go well in many sauces, etc., and even in savory dishes a dash will add some brightness and freshness to the finish. For a treat, mix 1/2 cup of sherry vinegar with 1/2 cup of brown sugar, bring to a simmer over med-low heat and concentrate it down. The resulting sauce/glaze is great with fish (esp. salmon), grilled vegetables, and even as a drizzle over berries and vanilla ice cream for dessert.

Great as substitute for Chinese Black Vinegar, gluten-free
I bought this Columela Sherry Vinegar to use as a substitute for Chinese Black Vinegar, which I haven’t been able to find gluten-free. Multiple websites mentioned using Sherry Vinegar instead, and this did work really well. This is just what I needed as the final touch for some recipes I’d been putting off. A Nice Step Up from basic Sherry Vinegar
I bought a bottle of regular Columela and a bottle of the 30 year. Just spend the extra few bucks and get the aged vinegar, as it is clearly more flavorful.

Use extreme caution when opening - or risk a spill
I see this has happened to others, so it's clearly not an isolated incident. I used the pull tab to remove the seal, and when I twisted the cap, the cork broke just below the lip of the bottle (see pictures). Returns & replacements won't happen, but Amazon will refund your money. Me, I'm rolling the dice and trying/buying again. Wish me luck! It's possible to push the wedged bit of cork down into the bottle, and pour into another container, but you'll most likely have cork bits to deal with (I was able to filter mine with a few layers of cheesecloth, but the bottle is pretty much worthless, can't cap it with original cap). You COULD use a cork from a spent wine bottle - if it fits.
