Q: Can you stack them with eggs in them?

Yes, that's what they are made for. we currently plastic milk creates , each create holds 5 flats at a time.

Q: are they easy to cut (into thirds)?

Until just now, I hadn't tried cutting them. But while they can be cut into thirds, half, whatever size you wanted, it is not easy. They have lines embossed on them to aid in cutting them but it's still not easy.

Q: Why would people want to buy these? Sound proof walls?

No they are too thin for that. Many people use them for raising and keeping crickets/roaches/some worms/grasshopper colonies. These bugs will trample each other to death if they are all on the bottom of the container. By throwing some eggcrate in, it gives them lots of climbing places and less dead guys. Other ppl use them for the bottom of planting pots as a decomposable light filler that takes up space. Keeps pots light and maneuverable and adds some detritus into soil. Win on all sides:)
