Is this the same thing as just vital wheat gluten or is there more to it, like nutritional yeast, etc?

It seems to be just vital wheat gluten and nothing else. Perfect for seitan.

how much gluten is in Seitan. is the same amount as wheat gluten IE 80% plus?

I don't know exactly, but it's 75% protein and works exactly the same as the vital wheat gluten I have previously purchased to make seitan with, so I'm guessing it's an equivalent proportion. In terms of taste, texture, preparation and nutritional content I could not tell any difference from the products labelled vital wheat gluten. Give it a go!
