Q: What are the dimensions of the product, not including the cable?

Appx 3" diameter. The cable is quite long, sufficient for use in a courtroom.

It should work just fine. I use mine with a digital voice recorder without a powered jack.

Q: How exactly do you "daisy chain" these mics?

You can somehwat see it in the photo. Each mic, to the right of the cord that's sticking out there is a 3.5mm input plug for plugging in another mic.

Q: Will this work with a 2.5mm headphone/mic connection? Trying to connect to a Cisco SPA508G.

Well, I'd expect not, as the plug is 3.5mm, and your connector is only 2.5mm. You could buy an adapter so it would fit. I see they have some on the amazon site.
