I would also say you should never store baby food in the tray. Remove it as soon as it's frozen and keep the cubes in a sealed ziploc plastic bag. Food shouldn't be left exposed in the freezer for long periods of time. This way you can also reuse the tray to make a bunch of different foods.

Everything by Sistema is BPA free, usually BPAs relate to plastic products, couldn't say for certain whether it's an issue with these trays (they're silicone), maybe write to the manufacturer?

Does anyone have issues with a white Residue when using the trays

We have used these trays for some years now and have not noticed that. However we are in a relatively soft water area, might that be something to do with it? We lived in a hard water area before and we had white limescale on everything.
