I'm looking for something that doesn't ride up when I dance or exercise. Would these be good for that?

Yes. These don't ride up and the legs are cotton wrapped (not simply elastic) so there is no pinching. They are also very good for warm weather, or exercise. These are my favorite underwear.

I weigh 140lb at 5’1. Should I get the 7?

I am 5' 3" roughly 135 lbs and the size 7 works for me.

I don't see a size chart. What size would I wear if I have a 39 inch hip?

Hello, NUMERIC ALPHA DRESS BUST WAIST HIP 4 XS 0-2 32-33" 26-27" 34-35" 5 S 4-6 34-35" 28-29" 36-37" 6 M 8-10 36-38" 30-32" 38-40" 7 L 12-14 39-41" 33-35" 41-43" For a 39" hip I would suggest the size 6.

What are the different styles of women’s underwear

I’m not sure what you mean but there are endless styles of women’s underwear. From very feminine & Lacey to very plain cotton and everything in between.
