Will 256gb sd cards work in this or are we limited to the 128gb?

You're limited to 128GB *if* you have an iPod 6th generation (that's the 80GB, 120GB, or the 160GB thick iPods.  You'll know if you have these because the 7th gen is 2.0.4 or 2.0.5 in the firmware (which you can see in Settings -> About)

Anything less than 2.0.4 that's not an iPod Video model 5th gen is a 6th gen and can only go up to 128GB unless you work on Rockbox (which I never used so I can't give insight into that).

But I was able to use 4x 512GB micro SD cards with no issues.  I tried a 1TB micro SD card and it had issues detecting the size of the micro SD card (it was a genuine SanDIsk card b/c I used it in my laptop, Samsung S6 Tab, and my LG V60 with absolutely no issues)... so keep that in mind.

While you can probably hit 16TB in theory due to 4k sectors on the disk, it seems you're stuck with 2TB... at least that's the highest people have been able to get so far.  Windows 10 (20.04) is supposed to be able to format MBR to larger than 2TB *if* the sectors are over 512 bytes.  So 2TB x (sector size / 512) is the limit, it seems.

Will iTunes allow this? Won’t lock me out of my account for modifying my iPod?

Itunes will not lock you out. But I rather use MediaMonkey but that's me. I own two 1tb iPods.

My computer will not recognize the ipod no matter what i do. and yes i went to iflash.xyz am using the quad. and 6th gen vidoe ipod 160gb please help?

Hello,
Are you sure you are using a 6th Gen iPod or a 7th Gen ?  6th Gen have the smaller 18 Pin interface and are full height.  So you would need a hard drive cable also.   Also what kind of cards are you installing and in what slots ?
Have you tried to launch Diag mode on the iPod also to see if it sees the card ?
