I'm having a hard time understanding how to read these scales as a beginner. Any advice?

The key word here is "Intervals". The scales are represented using the "Nashville Number System" which is a method of transcribing music by denoting the scale degree on which a chord is built.. These are both terms that should help you research and study your scales better.
