One of your products says "ansi b40.1 accuracy (±2%)"  one says "ansi b40.1 accuracy (±1-3%) --- how can an accuracy standard, vary?

ANSI B40.1 means that the lower 1/4 scale is +/- 3%,  the middle half of the scale is +/- 2% and the upper scale is +/- 3%. It is recommended that you choose a gauge where the pressure reading you will be using most often fall within the middle half. Example, If you have an automotive tire set at 35 PSI a gauge with a 100psi rating would be best as the 35 psi reading will fall within the middle half of the full range giving you an accuracy of +/- 2%. Can the gauge hold the pressure reading when it is removed from the tire?

It will hold the pressure when removed from the tire, and has a reset button that releases the air after the gauge is read. If you want to lower the tire pressure without removing contact with the tire, hold the reset button in and monitor the air pressure drop.
