Can the candy become rancid?

Depends on were you keep it! I have kept a can for almost 1 year in a cool dark place as I only take out a piece every so often-- it is just so good I could eat too much -In the year time the candy has maintained it freshness and remained very good. However, I think if you change the temp. several times and not close the container, it of course, would affect the product!
