MINERAL B Carbon Steel Wok

I bought several of the cheaper woks that didn’t work well with the intense heat of my outdoor wok burner (too unwieldy or coating flakes off). This de Buyer was the most expensive, but it performs the best. It is a thicker, carbon steel and the shape does a great job of directing the flame around the sides. The 12.5” size is heavy, but not too heavy to flip the ingredients. I did season mine before I used it the first time, but the deep black is just from cooking with it. Don’t be dissuaded by reviewers who complained that their de Buyer woks rusted; that’s what carbon steel does without proper seasoning! The other option is to buy one with some type of Teflon-like coating, which will flake off under high heat. I prefer the first option. I tried the cheaper woks first to try and save money. Yet, I’d have saved more if I had bought this one first.

This is the third DeBuyer pain I’ve purchased and it’s great. Seasoned well and I fixed Beijing Beef with it last night, perfect. I’d recommend these pans to anyone.

After seasoning the pan a few times, I did a vegetable stir fry test. Worked well and did not have any sticking issues. The pan is quite heavy and it makes it hard to use and clean. When you get the pan it's 12.5in size will seem huge, I guess that's just the way it goes. :-) As a side note, when cleaning this pan be sure NOT to leave it in water or rinsing the pan and not drying it. It will surface rust in just a few hours or less. Very picky pan surface when cleaning. Maybe after time when it builds up a great "black" seasoned surface it might not be as bad.
